Creamy Chicken Tortilla Soup

I found this recipe on the label of a can of Rosarita refried beans and it became an instant favorite. Because it is made from canned goods it is easy to store a 3 month supply of the ingredients. You can even use canned chicken. For better flavor you can use homemade refried beans instead of canned.

Creamy Chicken Tortilla Soup

2 cans Rotel
2 cans chicken broth
1 can refried beans
1 can corn
2 cups cooked, shredded chicken

Combine tomatoes and broth in medium saucepan. Stir in beans and corn. Bring to boil; reduce heat to low and simmer 5 minutes, stirring frequently. Add chicken; heat through. Top with tortilla strips and cheese.
